A new take on banana bread…

LOVE banana bread.  LOVE chocolate.  But banana and chocolate bread – two of the best things EVER – combined to form one yummy, delicious baked good?


May I present to you: Banana and Chocolate Muffins.

Ingredients: butter (4 oz.), ripe bananas (2), sugar (1/2 cup), eggs (2), flour (1 1/2 cups), unsweetened cocoa (1/4 cup), baking powder (1 tsp.), milk (1 tbsp.), and milk chocolate or semi-sweet chocolate chips (1/2 cup).

1.  Peel the bananas and place in a large bowl (I used my Kitchenaid mixer).  Mash with a fork.

2. Add the butter, sugar, and eggs…

Next, sift the flour, unsweetened cocoa, and baking powder in the bowl.

Beat vigorously until smooth-ish, adding enough milk to give a reluctant dropping consistency.

Stir in the chocolate chips.

3. Spoon the mixture into baking cups and place into cupcake pan.  Bake in a pre-heated oven (350 F) for 50 – 60 minutes, or until well risen and the tip of a knife inserted in the center comes out clean.

Let stand in the pay for 5 minutes, then place individual muffins onto a wire rack to cool completely.

Serve as-is, with butter, or with a scoop of your favorite vanilla bean ice cream.  ENJOY – and you’re welcome…

  1. looks yummy! i’ve made so many different banana bread recipes, but i never thought of sticking them in a muffin tin! ingenious! 🙂
